Ingredients:


120g of type 0 flour

20g of instant yeast

200g of organic Goat's Milk Ricotta from Perenzin Dairy

100g of organic Goat's Milk Caciottona from Perenzin Dairy, cut into small cubes (retain the rind as well!)

100g of organic Goat's Milk Caciottona from Perenzin Dairy, cut into larger cubes (retain the rind as well!)

2 eggs

Salt

Extra virgin olive oil

Breadcrumbs

Commence by placing the organic Goat's Milk Ricotta from Perenzin Dairy in a bowl and gently manipulate it with a fork. Introduce the sifted flour along with the instant yeast, eggs, salt, pepper, and the organic Goat's Milk Caciottona cut into diminutive cubes.


Knead and shape the concoction into balls, delicately rolling them through the breadcrumb coating.


At this juncture, embed within the core of each ball a few morsels of the organic Goat's Milk Caciottona cut into larger cubes (destined to become the lusciously melting heart of the ball).
