It all began with their great-grandfather, Giovanni Ciresa, who laid the foundation for this legacy. In the 1950s, he passed the torch to their grandfather, Gildo, and today, the tradition continues to flourish within the entire family. The chain of tradition and knowledge passed down from one generation to the next is the heart of their business.


Situated in Valsassina, a valley historically renowned for cheese aging, enriched by the presence of the Introbio caves, Gildo Formaggi embodies the essence of this region. Their company's philosophy is deeply rooted in honoring the traditions of Valsassina and its iconic products, all while maintaining an unwavering commitment to quality.
