Unlike many Italian cheeses, Ragusano has a rectangular shape, earning it the local nickname Scaluni or Quattrofacce(“four faces”). Its firm texture and bold, savoury flavour profile make it incredibly versatile—ideal for both traditional and contemporary dishes.

Certified under the DOP (Protected Designation of Origin) system, every stage of Ragusano’s production is strictly regulated—from milk selection to its artisanal ageing process. The cheeses are hung in pairs over wooden beams (“a cavallo”), a technique that reflects the origins of the word caciocavallo.
